Chunky Banana Oatmeal

     I grew up on oatmeal breakfasts, and nothing like that warm, thick and creamy porridge can get me going on a tough day in school. For a change, I replaced mashed bananas for milk and it turned out really great. I added some chunky candied plantain bits to make it extra special.


Banana oatmeal:
  1/2 cup oatmeal (not instant)
  1/2 cup mashed banana
  1 1/2 cup water

Candied plantains:
  1 cup chopped plantains
  1/4 cup brown sugar
  1/4 cup water

Cooking instructions:
  1. Make the candied plantain. Dissolve sugar in water in a small pan, add the plantains, cover and cook over low flame until almost all the liquid is gone. Set aside.
  2. In the same pan combine water, mashed bananas and oats. Cook over medium flame, stirring continuously until thick.
  3. Transfer to a bowl or cup, add in the candied plantains and enjoy! Yummmmmm!
