Apple Pie Bars

     I love apple pie, but sometimes I just want to eat them without all the fuss of sitting down and using a fork. Eating them on the go would be lovely so I tried making these apple pie bars. Since it goes well with oatmeal crumble, I made a oatmeal cookie base and the usual oatmeal crumble on top. It turned out really great but I wished I just used a pie crust base instead since the oatmeal cookie sandwiched the apples and kinda overpowered it. Will do that next time. But if you love oatmeal cookie this is a must try.


Oatmeal Cookie base:
  1 cup flour
  1/2 tsp baking soda
  1/2 tsp baking powder
  1/4 tsp salt
  1/2 cup butter
  1 cup sugar
  1 egg
  2 tsp vanilla
  2 1/4 cup oatmeal

1. Mix flour, sugar, baking soda, baking powder and salt.
2. In a separated bowl, cream sugar and butter. Add eggs and vanilla and mix well.
3. Add flour mixture to the wet ingredients until no more flour is seen. Fold in the oatmeal and mix well.
4. Spread cookie mixture on a pan.

Apple filling
  6 cups sliced apples
  1/2 cup sugar
  1 tsp cinnamon
  1/4 tsp salt

5. Mix sugar, cinnamon and salt. Toss in apples.
6. Spread apple filling to cookie base.


Oatmeal crumble
  1 cup sugar
  1/2 cup flour
  1/2 cup oatmeal
  1/2 cup butter
  1/8 tsp baking soda
  1/4 tsp salt


7.  Cream and butter. Add in rest of the ingredients until crumbly.
8. Sprinkle on top of apple filling.
9. Bake on a preheated 350 degree oven for 40-45 minutes or until crumble top is golden brown.
10. Let it cool and cut into bars.
