Ube Halaya Muffins - an Experiment

       Following the success of my zero fat banana muffins, I tried to experiment on one of my favorite things, ube (purple yam)! I love love love ube, especially the ube halaya on Chowking's halo-halo. Although most ube products rely on artificial colors and flavors, they're still good.

     So yesterday I bought one kilo of ube after my morning walk and made halaya. My ratio is always 1 kg ube is to 1 can sweetened condensed milk. I just used 1 cup for the experiment and kept the rest, and based the recipe from the banana muffins.


     This is a half recipe and yields 8 muffins.

Ingredients:
  3/4 cup all-purpose flour
  1 cup ube halaya
  1/3 cup brown sugar
  1/4 cup green papaya juice
  1/4 cup water
  1/2 tsp baking soda
  1/2 tsp salt

Cooking instructions:
  1. Sift and combine all dry ingredients. Mix thoroughly and evenly.
  2. Combine all wet ingredient and mix together evenly.
  3. Add the wet ingredients into the dry ingredients and mix well until a batter is formed.
  4. Lightly grease the paper cups and pour the batter up to 3/4 of each cup.
  5. Bake in a preheated 350 degree oven for 20-25 mins.
  6. Remove from the oven and allow to cool.

     They didn't rise as high as I expected. Actually when they came out of the oven they were firm, rounded and was a pale shade of purple; but after they cooled down they kinda shrunk, winkled and became a shade of green. But don't be deceived by it's zombie-ish appearance, because they taste great! Unlike most ube cakes, this one really taste like real thing with no papaya aftertaste. There is also some chunky ube bits, yummmm!
