Express Ube Halaya "Purple Yam Dessert"

     Ube Halaya is a traditional Filipino dessert made from purple yams (ube) that is served during special occasions and is also an ingredient in making halo-halo. Ube or purple yam is basically a sweet potato that is purple in color. They are low in calories, high in vitamin C and A, and has a lower glycemic index than potatoes.



     Ube Halaya is very easy to make because it only needs 2 ingredients: yam and sweetened condensed milk. However, it's quite tiring and time consuming to make because it requires cooking over a low flame with continuous stirring until it thickens. This is why it is a "special" dessert.

   This is an express version of Ube Halaya because it does not require the exhausting stirring. I made this with less condensed milk than usual so it is less sweeter which brings out the rich Ube flavor.

Ingredients:
  1 kg Ube (purple yam)
  1 can (300 ml) sweetened condensed milk

Cooking instructions:
1. Peel and steam the yams until tender. You can also use the canned ones.
2. Chop and then grind in a food processor. Add the sweetened condensed milk and continue to blend until smooth and thick.
3. Transfer in a mold and refrigerate.
